  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup pasta (any shape)
  • 2 cups mixed vegetables (like spinach, green beans, or zucchini)
  • Salt and pepper to taste
  • Fresh herbs (like basil or parsley) for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery. Sauté until they are tender, about 5-7 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Pour in the vegetable broth and diced tomatoes. Bring to a simmer.
  5. Add the pasta and cook according to the package instructions, usually around 8-10 minutes.
  6. Add your mixed vegetables and cook until they are tender, about 3-4 minutes.
  7. Season with salt and pepper to taste. Garnish with fresh herbs before serving.
