A comforting casserole that combines Tex-Mex flavors with hearty ingredients, perfect for family dinners and gatherings.

  • 1 packet taco seasoning mix
  • 1 can (4 oz) diced green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1/2 cup diced tomatoes
  • 1/2 cup red onion, finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 package (8 oz) crescent roll dough
  • 1/2 cup sour cream
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks. Drain any excess fat.
  3. Add the taco seasoning mix, diced green chilies, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper. Stir to combine and let simmer for 5 minutes.
  4. Unroll the crescent roll dough and lay it flat in the bottom of a 9×13-inch baking dish, pressing the seams together to form one even layer.
  5. Spread the beef mixture evenly over the dough, pressing it into the corners.
  6. Top with shredded cheddar and mozzarella cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the crescent dough is golden brown.
  8. Remove from the oven and let cool for 5 minutes.
  9. Top with a dollop of sour cream and garnish with fresh cilantro.

Notes

Serve hot, with optional toppings like jalapeños, avocado, or salsa. For a vegetarian version, use a plant-based meat alternative or add more beans.
