1 cup dried lentils (green or brown)
1 onion, diced
2 carrots, chopped
2 celery stalks, chopped
3 garlic cloves, minced
6 cups vegetable or chicken broth
1 can diced tomatoes (14.5 oz)
1 teaspoon ground cumin
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons olive oil
1. Heat olive oil in a large pot over medium heat.
2. Add onions, carrots, and celery. Sauté until softened, about 5–7 minutes.
3. Stir in minced garlic and cook for 1 minute.
4. Add lentils, broth, tomatoes, cumin, thyme, salt, and pepper.
