A comforting soup with robust Italian flavors, made effortlessly in a crockpot for busy weeknights or cozy weekends.

Ingredients

  • 1 can white beans (like cannellini or great northern), drained and rinsed
  • 1 can diced tomatoes with herbs
  • 1 cup vegetable broth (or chicken broth)
  • 1 cup carrots, diced
  • 1 cup zucchini, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh spinach or kale, added at the end
  • Grated Parmesan cheese, for garnish

Instructions

  1. Start by chopping your vegetables and mincing the garlic.
  2. Add all ingredients, except for the spinach/kale and cheese, into the crockpot.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. About 10 minutes before serving, stir in the spinach or kale and allow it to wilt.
  5. Ladle into bowls, garnish with Parmesan cheese, and enjoy!

Notes

Ensure vegetables are chopped roughly the same size for even cooking. If you want a thicker soup, mash some beans against the side of the pot.
