A bright, creamy salad made with shredded chicken, ripe avocado, and fresh herbs, perfect for quick lunches or meal prep.

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 large ripe avocado, diced
  • 1/4 cup plain Greek yogurt (or 2 tbsp olive oil)
  • 1 celery stalk, finely chopped
  • 2 tbsp red onion, minced
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro (optional)
  • Salt and black pepper to taste

Instructions

  1. Cook or shred chicken and let cool.
  2. Mix avocado, lime juice, and Greek yogurt until creamy.
  3. Combine all ingredients and season to taste. Chill for 10–20 minutes or serve immediately.

Notes

Store in an airtight container and press plastic wrap onto the surface to limit browning. Best served cold or at room temperature.
