Healing Cabbage Soup

A soothing and simple cabbage soup that uses pantry vegetables and a gentle broth to calm the stomach and lift the mood.

Ingredients

  • 1 medium head green cabbage, thinly sliced
  • 2 tbsp olive oil or neutral oil
  • 1 large onion, diced
  • 2 large carrots, sliced or diced
  • 2 celery stalks, sliced (optional)
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, with juices
  • 6 cups vegetable or low-sodium chicken broth
  • 12 bay leaves
  • 1 tsp smoked or sweet paprika (optional)
  • Salt and black pepper to taste
  • Fresh parsley or dill to finish

Instructions

  1. Warm the oil in a large pot over medium heat. Add onion and a pinch of salt. Cook until translucent, 4–6 minutes.
  2. Stir in carrots and celery. Cook for 3–4 minutes until they soften.
  3. Add garlic and cook for 30 seconds until fragrant.
  4. Pour in diced tomatoes and broth. Add bay leaves and paprika. Bring to a simmer.
  5. Add sliced cabbage. Reduce heat and simmer gently for 15–20 minutes until cabbage is tender.
  6. Taste and season with salt, pepper, and a splash of vinegar if desired. Remove bay leaves. Garnish with fresh herbs and serve.

Notes

This soup is flexible; you can add beans or grains for a fuller meal, and it stores well for leftovers.
