Delicious and colorful vegetarian skewers perfect for summer barbecues or quick weeknight dinners.

Ingredients

  • Bell peppers (any color)
  • Zucchini
  • Cherry tomatoes
  • Red onion
  • Olive oil
  • Salt
  • Pepper
  • Optional: your choice of herbs (oregano or basil)

Instructions

  1. Wash and chop all your vegetables into bite-sized pieces.
  2. Combine the chopped veggies with olive oil, salt, pepper, and herbs in a bowl.
  3. Preheat your grill or grill pan to medium-high heat.
  4. Thread the vegetables onto skewers, alternating between different types for presentation.
  5. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally.
  6. Grill until the veggies are tender and slightly charred.
  7. Remove from the grill, let them cool slightly, and serve with your favorite dipping sauce or on a bed of rice.

Notes

Cut veggies into uniform pieces for even cooking. Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
