Bright and bold grilled corn topped with a zesty spicy lime butter, perfect for summer cookouts.

Ingredients

  • Fresh corn on the cob (4–6 ears), husks removed
  • Unsalted butter, softened (4 tablespoons)
  • Lime zest and juice (1 lime)
  • Chili powder (1 teaspoon)
  • Cayenne pepper (to taste; start with 1/8–1/4 teaspoon)
  • Garlic, finely grated or minced (1 small clove)
  • Honey or agave (1/2 teaspoon), optional for balance
  • Kosher salt and black pepper
  • Neutral oil (for brushing corn)
  • Fresh cilantro, chopped (for garnish)
  • Cotija or feta cheese, optional for serving
  • Lime wedges for serving

Instructions

  1. Preheat the grill to medium-high (about 400–450°F). If using a grill pan, heat it over medium-high until hot.
  2. Make the spicy lime butter: In a bowl, mix softened butter, lime zest, lime juice, chili powder, cayenne, garlic, honey (if using), salt, and pepper until smooth.
  3. Prep the corn: Remove husks and silk. Pat dry. Brush the cobs lightly with oil and season with a pinch of salt.
  4. Grill the corn: Place on the hot grates. Cook, turning every 2–3 minutes, until lightly charred on all sides, about 10–12 minutes total.
  5. Baste with flavor: During the last 2–3 minutes, brush the corn with some spicy lime butter so it melts into the kernels.
  6. Finish and rest: Remove the corn. While hot, brush with more butter. Let it rest 1–2 minutes so the butter soaks in.
  7. Serve: Sprinkle with cilantro and cotija (if using). Add a final squeeze of lime. Taste and adjust salt or heat if needed.

Notes

This corn pairs well with burgers, grilled chicken, or tacos, and works as a snack or starter.
