A quick and easy recipe for Greek Chicken Gyros with Tzatziki Sauce, perfect for weeknight meals.

  • 1.5 lb boneless, skinless chicken thighs or breasts
  • 3 tbsp olive oil
  • 1 lemon, juiced
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup plain Greek yogurt
  • 1/2 cucumber, seeded and grated
  • 1 cup plain Greek yogurt (for tzatziki)
  • 1 garlic clove, minced (for tzatziki)
  • 1 tbsp lemon juice (for tzatziki)
  • 1 tbsp olive oil (for tzatziki)
  • Dill or mint (chopped, for tzatziki)
  • Pita breads or flatbreads
  • Optional toppings: sliced tomato, red onion, shredded lettuce, feta

Instructions

  1. Mix the marinade: Combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Stir in Greek yogurt for a tangy marinade.
  2. Add chicken: Cut chicken into strips or leave whole. Toss with marinade and chill for 30 minutes to 2 hours.
  3. Make tzatziki: Grate and squeeze cucumber to remove excess water. Mix with Greek yogurt, minced garlic, lemon juice, olive oil, and chopped dill or mint. Chill until serving.
  4. Cook chicken: Heat a skillet or grill over medium-high heat. Add oil and cook chicken for 5–7 minutes per side until browned and cooked through. Rest for 5 minutes and then slice.
  5. Warm pitas: Wrap pitas in foil and warm in a low oven or heat briefly in a dry pan.
  6. Assemble: Spread tzatziki on pita, add chicken, tomatoes, onion, lettuce, and a sprinkle of oregano or feta. Fold and serve.

Notes

Use thighs for juicier meat and don’t skip squeezing the cucumber to avoid watery tzatziki.
