Golden baked mashed potatoes make a cozy, comforting side with a crisp top and creamy interior, perfect for weeknight dinners or holiday plates.

Ingredients

  • 2.5 lb Yukon Gold potatoes, scrubbed and quartered
  • 4 tbsp unsalted butter (or dairy-free spread)
  • 1/2 to 3/4 cup whole milk or cream
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 tsp salt, plus more to taste
  • 1/4 tsp black pepper
  • 1/2 cup grated sharp cheddar (optional for topping)
  • 2 tbsp melted butter or oil for brushing the top
  • Fresh chives or parsley, chopped, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place quartered potatoes in a large pot and cover with cold water. Add a teaspoon of salt. Bring to a boil, then simmer until very tender, about 15–20 minutes.
  3. Drain well and return potatoes to the hot pot. Let steam for a minute to remove excess moisture.
  4. Mash with butter, then stir in sour cream and enough milk to reach a creamy but firm texture. Season with salt and pepper.
  5. Spoon the mashed mixture into a buttered baking dish. Smooth the top. Brush with melted butter or oil. Sprinkle cheddar or Panko if using.
  6. Bake for 20–25 minutes until the top is golden. For a deeper brown, place under the broiler for 1–2 minutes—watch closely.

Notes

These potatoes can be made ahead of time and reheated before serving. For extra flavor, fold in roasted garlic or herbs.
