  • 1 baguette or ciabatta loaf, sliced into ½-inch thick pieces (12 slices)
  • 8 oz (225g) soft goat cheese, at room temperature
  • 2 tbsp extra virgin olive oil, plus more for brushing bread
  • 1 tsp fresh lemon juice
  • 1 tsp lemon zest
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • 2 tbsp fresh herbs (such as thyme, basil, or chives), finely chopped
  • ⅓ cup (40g) shelled pistachios, coarsely chopped
  • 2 tbsp honey (optional)
  • Microgreens for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Arrange bread slices on a baking sheet and lightly brush each piece with olive oil.
  3. Toast in the preheated oven for 5-7 minutes, or until the edges are golden and crisp.
  4. While bread is toasting, combine goat cheese, 2 tablespoons olive oil, lemon juice, lemon zest, salt, pepper, and herbs in a bowl. Mix until smooth and well combined.
  5. Remove toasted bread from the oven and let cool slightly.
  6. Spread a generous layer of the goat cheese mixture on each slice of toasted bread.
  7. Sprinkle the chopped pistachios evenly over the goat cheese layer.
  8. If using honey, drizzle a small amount over each piece.
  9. Garnish with microgreens if desired.
  10. Arrange on a serving platter and serve immediately.

Can be partially prepared ahead; toast bread and assemble just before serving for best texture
