Delicious and nutritious fudgy protein brownies that satisfy your sweet tooth while being packed with protein.

Ingredients

  • 1 cup Oat Flour
  • 1/2 cup Unsweetened Cocoa Powder
  • 1/2 cup Granulated Sweetener (Erythritol, Stevia Blend, or Regular Sugar)
  • 1/4 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 2 large Eggs
  • 1/2 cup Unsweetened Applesauce
  • 1/4 cup Melted Coconut Oil (or any neutral oil)
  • 1/4 cup Milk (Dairy or Non-Dairy)
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Chocolate Protein Powder
  • 1/4 cup Chocolate Chips (optional)
  • Chopped Walnuts or Pecans (optional)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Line an 8×8 inch baking pan with parchment paper.
  3. In a large bowl, whisk together the oat flour, cocoa powder, sweetener, baking powder, and salt until there are no lumps.
  4. In a separate bowl, whisk together the eggs, applesauce, melted coconut oil, milk, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  6. Add the protein powder and gently fold it in until just incorporated. Don’t overmix!
  7. If using, fold in the chocolate chips and/or nuts.
  8. Pour the batter into the prepared baking pan and spread it evenly.
  9. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  10. Let the brownies cool completely in the pan before cutting into squares.

Notes

Use room temperature eggs for better mixing. Let the brownies cool for a while in the pan for a fudgier texture. Store any leftovers in an airtight container to keep them fresh.
