1/4 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon (optional)
2/3 cup milk
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups fresh peaches, peeled and diced
Oil, for frying
1 cup powdered sugar
2 tablespoons milk (for glaze)
1/2 teaspoon vanilla extract (for glaze)
Instructions
In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and cinnamon (if using).
In another bowl, combine the milk, eggs, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Gently fold in the diced peaches.
In a deep skillet, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C).
Using a spoon, drop spoonfuls of the batter into the hot oil, frying for about 2-3 minutes on each side until golden brown. Remove fritters with a slotted spoon and drain on paper towels.
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract for the glaze until smooth.
Drizzle or dip the warm fritters in the glaze and serve immediately.
Notes
Fry in batches to avoid overcrowding the pan and ensure crispy fritters. Fresh peaches provide the best flavor.
