Ingredients

Scale
  • 2-3 large yellow onions, thinly sliced
  • 3 tbsp butter
  • 2-3 garlic cloves, minced
  • 1 ½ cups long-grain or basmati rice, rinsed
  • 4 cups beef broth (or vegetable broth for vegetarian option)
  • 1-2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • 1 ½  cups shredded Gruyère cheese (or Parmesan, mozzarella, or cheddar)
  • Optional: Fresh parsley or chives for garnish

Instructions

  1. Caramelize the Onions: Melt butter in a large skillet or Dutch oven over medium heat. Add sliced onions and cook for 25-30 minutes, stirring occasionally, until golden brown. Add minced garlic in the last 2 minutes.
  2. Toast the Rice: Stir in rinsed rice and cook for 1-2 minutes to lightly toast.
  3. Simmer: Add beef broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until rice is tender.
  4. Add Cheese: Remove thyme sprigs and bay leaf. Sprinkle shredded cheese evenly over the top.
  5. Broil: Place under a preheated broiler for 2-3 minutes until cheese is melted and bubbly.
  6. Serve: Garnish with fresh parsley or chives and enjoy!

Notes

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave, on the stovetop, or in the oven.

  • Vegetarian Option: Use vegetable broth and add a splash of soy sauce for depth.

  • Add-Ins: Customize with sautéed mushrooms, shredded chicken, or crispy bacon.

  • Cheese Variations: Experiment with Gruyère, Parmesan, mozzarella, or cheddar for different flavor profiles.

  • Pro Tip: Caramelize onions low and slow for the best flavor—don’t rush this step!
