A soft, quick loaf made with cottage cheese that is perfect for toasting, sandwiches, or as a simple snack.

  • 1 1/2 cups cottage cheese (drained slightly if very watery)
  • 3 large eggs, room temperature
  • 1 1/2 cups all-purpose flour (or a mix with whole wheat)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda (optional, for extra lift)
  • 1/2 teaspoon fine salt
  • 2 tablespoons olive oil or melted butter
  • 1 tablespoon honey or sugar (optional, for mild sweetness)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×5-inch loaf pan or line it with parchment.
  2. In a bowl, whisk the eggs lightly. Add cottage cheese, oil, and honey. Mix until mostly smooth.
  3. In another bowl, combine flour, baking powder, baking soda (if using), and salt. Stir to blend.
  4. Fold dry ingredients into the wet mixture until just combined. Do not overmix; a few small lumps are okay.
  5. Pour batter into the prepared pan and smooth the top. Bake for 35-45 minutes, or until a skewer in the center comes out clean and the top is golden.
  6. Cool in the pan for 10 minutes, then remove and cool on a rack before slicing.

Notes

Use room-temperature eggs for a more even rise. Overmixing makes the crumb dense. Store slices wrapped tightly at room temperature for 2 days or refrigerated for up to 5 days.
