Delightful pancakes combining the sweetness of ripe bananas and rich brown sugar, perfect for breakfast or brunch.

  • 1 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk (or milk)
  • 1 large egg
  • 1 ripe banana, mashed
  • 2 tablespoons melted butter (or vegetable oil)

Instructions

  1. In a bowl, mix the flour, brown sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the buttermilk, egg, mashed banana, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Don’t worry about lumps!
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake.
  6. Cook for 2-3 minutes until bubbles form, then flip and cook for another 2 minutes or until golden brown.
  7. Serve warm with your favorite syrup or toppings.

Notes

For a healthier option, use whole wheat flour. To make it dairy-free, replace buttermilk with non-dairy milk mixed with vinegar.
