A delicious and healthy dessert made with sweet potatoes for natural sweetness and moisture, completely vegan for guilt-free enjoyment.

  • 1 cup mashed sweet potatoes
  • 1 cup flour
  • 1/2 cup cocoa powder
  • 1/2 cup sugar or maple syrup
  • 1/4 cup vegetable oil or coconut oil
  • 1 cup almond milk or any plant-based milk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a large bowl, combine the mashed sweet potatoes, sugar or maple syrup, oil, almond milk, and vanilla extract. Mix well.
  3. In another bowl, sift together the flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.

Notes

Make sure to mash the sweet potatoes well for a smooth batter. Let the cake cool completely before slicing for the best texture. Dust with powdered sugar or top with vegan frosting if desired.
