A refreshing pasta salad perfect for summer gatherings, combining vibrant colors and delicious flavors.

  • 1 cup cherry tomatoes, halved
  • 1 cup bell pepper, diced (any colors you choose)
  • 1 cup cucumber, diced
  • ½ cup red onion, diced
  • ½ cup black olives, sliced
  • 1 cup feta cheese, crumbled (optional)
  • ½ cup Italian dressing (or dressing of your choice)
  • Salt and pepper to taste

Instructions

  1. Begin by cooking the pasta according to the package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooled pasta with cherry tomatoes, bell pepper, cucumber, red onion, black olives, and feta cheese.
  3. Pour the Italian dressing over the salad and toss gently to combine everything well.
  4. Season with salt and pepper to taste, adjusting as preferred.
  5. Cover and let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
