Ingredients

Dry Ingredients

  • 300 g all-purpose flour (sifted)
  • 5 g baking soda
  • 5 g salt (fine sea salt recommended)

Wet Ingredients

  • 225 g unsalted butter (softened)
  • 150 g granulated sugar
  • 150 g brown sugar (lightly packed)
  • 2 large eggs (about 100g total, room temperature)
  • 5 ml vanilla extract (pure vanilla recommended)

Chocolate & Extras

  • 300 g chocolate chips (semi-sweet or mixed varieties)
  • 50 g optional mix-ins (chopped nuts, coconut flakes, or sea salt flakes)

Instructions

  1. Preheat oven to 175°C (347°F) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Gradually mix in the dry ingredients until just combined. Do not overmix.
  6. Fold in the chocolate chips and any optional mix-ins.
  7. Chill dough for at least 30 minutes to improve texture and prevent excessive spreading.
  8. Scoop cookie dough into 40-50g portions, rolling into balls and spacing them 5cm apart on the prepared baking sheet.
  9. Bake for 10-12 minutes until the edges are golden brown but the centers remain slightly soft.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

For best results, chill the dough overnight for a richer flavor. You can substitute part of the flour with bread flour for a chewier texture.
