Delicious and cozy pumpkin spice muffins perfect for fall, filled with warm spices and a sweet aroma.

  • 1 cup canned pumpkin puree
  • 1 cup sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger
  • ½ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease them.
  2. In a large mixing bowl, combine the pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract. Mix until well blended.
  3. In another bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix!
  5. Pour the batter into the prepared muffin tin, filling each cup about three-quarters full.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.

Notes

For a gluten-free version, swap the all-purpose flour for a 1:1 gluten-free flour blend. To make it vegan, substitute the eggs with flax eggs.
