A hearty, creamy soup made with ground beef, tender potatoes, and cheddar cheese. This Crockpot Creamy Potato & Hamburger Soup is a satisfying slow-cooked meal perfect for weeknight dinners or chilly weekends.

Ingredients

1 pound ground beef

4 medium potatoes, peeled and diced

1 onion, chopped

3 cloves garlic, minced

4 cups beef broth

1 cup heavy cream

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme

1 cup shredded cheddar cheese

Chopped green onions for garnish (optional)

Optional: 1 to 1½ cups diced carrots

Instructions

1. Brown ground beef in a skillet over medium heat until fully cooked, about 7–9 minutes. Drain excess fat.

2. Transfer cooked beef to the crockpot.

3. Add diced potatoes, chopped onion, minced garlic, and carrots if using.

4. Pour in beef broth. Season with salt, black pepper, and thyme. Stir to combine.

5. Cover and cook on low for 6–7 hours or high for 3–4 hours until vegetables are tender.

6. Stir in heavy cream and shredded cheese. Let cheese melt into the soup for 10–15 minutes.

7. Ladle soup into bowls and garnish with chopped green onions if desired. Serve hot.

Notes

For a lighter version, substitute ground turkey and light cream.

To thicken the soup naturally, mash some of the potatoes after cooking but before adding cream.

This soup stores well for up to 4 days in the refrigerator. Freeze before adding cream for best texture.
