1 pound boneless, skinless chicken breast
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) diced tomatoes with green chilies
1 cup corn (frozen or canned)
1 yellow onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 tablespoon chili powder
1 tablespoon cumin
Salt and black pepper to taste
Tortilla strips for topping
Optional: diced avocado, shredded cheese, fresh cilantro, lime wedges, sour cream
1. Place the chicken breasts at the bottom of the slow cooker.
2. Add black beans, diced tomatoes, corn, chopped onion, and garlic.
