Crispy Parmesan Potatoes are the perfect side dish with a golden, crunchy exterior and a soft, fluffy inside, elevating any meal.

  • 2 pounds of potatoes (Yukon Gold or Russet)
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the potatoes, then cut them into bite-sized cubes.
  3. In a large mixing bowl, combine the cubed potatoes with olive oil, garlic powder, salt, and pepper. Stir until evenly coated.
  4. Sprinkle the grated Parmesan cheese over the potatoes and mix again until coated.
  5. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  6. Bake in the oven for 25-30 minutes, stirring halfway through, until they are golden brown and crispy.
  7. Remove from the oven, garnish with fresh parsley, and serve while hot.
