Crispy Parmesan Polenta Rounds are a delightful dish with a crispy exterior and creamy inside, perfect for dipping or on their own.

Ingredients

  • 1 cup polenta
  • 4 cups water or broth
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring water or broth to a boil.
  2. Gradually whisk in the polenta, stirring continuously to avoid lumps.
  3. Cook for about 20 minutes until thick, then remove from heat.
  4. Stir in Parmesan cheese, salt, and pepper.
  5. Spread the polenta onto a baking sheet lined with parchment paper. Smooth it out to about 1/2 inch thickness. Allow it to cool for at least 30 minutes.
  6. Once cooled, slice the polenta into round shapes.
  7. Preheat the oven to 425°F (220°C). Brush each round with olive oil and place them on a baking sheet.
  8. Bake for 20-25 minutes until crispy and golden, flipping halfway through.

Notes

For the crispiest rounds, ensure they are evenly spaced on the baking sheet. Store leftovers in an airtight container for up to three days.
