A crunchy, savory side dish featuring cauliflower florets coated in bold garlic flavor, melty cheese, and a light crispiness that makes them irresistibly snackable.

  • 1 large head cauliflower, cut into bite-sized florets
  • 3 cloves garlic, minced (or 1 tsp garlic powder)
  • 1 cup grated sharp cheddar (or a mix of cheddar and Parmesan)
  • 1/2 cup panko breadcrumbs
  • 2 tbsp olive oil
  • 1/2 tsp smoked paprika (optional)
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment.
  2. In a large bowl, combine olive oil, minced garlic, smoked paprika, salt, and pepper. Add cauliflower florets and toss until well coated.
  3. In a separate bowl, mix panko breadcrumbs and grated cheese. Toss the oiled florets with the breadcrumb-cheese mix so they have an even coating.
  4. Spread florets in a single layer on the prepared sheet, leaving space between pieces.
  5. Roast for 20–25 minutes, flipping once halfway, until the coating is golden and the cauliflower is tender. For extra crispness, broil for 1–2 minutes while watching closely.
  6. Garnish with chopped parsley and serve warm.

Notes

For a gluten-free option, use gluten-free panko. For dairy-free, swap cheese for a firm dairy-free cheese and add more spices. Can be paired with a salad or pasta.
