A comforting bowl of creamy vegetable soup packed with fresh flavors and nutrients, perfect for any chilly day.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 potatoes, diced
  • 1 cup broccoli florets
  • 4 cups vegetable broth
  • 1 cup heavy cream (or a dairy-free alternative)
  • Salt and pepper to taste
  • Optional garnishes: fresh parsley, croutons

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.
  2. Stir in the carrots and potatoes. Cook for about 5 minutes.
  3. Add the broccoli and vegetable broth. Bring to a boil, then reduce to a simmer. Cook until all vegetables are tender, about 15 minutes.
  4. Use an immersion blender to puree the soup until smooth. (You can also transfer it in batches to a blender if needed.)
  5. Stir in the heavy cream and season with salt and pepper. Allow to simmer for a few more minutes before serving.

Notes

For a vegan version, replace heavy cream with coconut milk or a nut-based cream. You can also add red pepper flakes or curry powder for an extra kick.
