This creamy Italian meatball soup blends tender homemade meatballs, hearty tomatoes, fresh spinach, and a swirl of cream into a comforting one-pot meal.
1 pound ground beef
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
2 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
4 cups beef broth
1 can (14.5 oz) diced tomatoes
1 cup heavy cream
2 cups spinach
Fresh basil for garnish
1. In a large bowl, combine beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Mix until just combined.
2. Roll into 1-inch meatballs and set aside.
3. Bring beef broth to a gentle boil in a large pot.
4. Carefully drop in meatballs and simmer for 15 minutes.
5. Add diced tomatoes and simmer another 5 minutes.
6. Stir in heavy cream and reduce heat.
7. Add spinach and stir until wilted.
