Creamy Cottage Cheese Chicken, Mushroom, and Spinach Casserole

A comforting casserole combining tender chicken, earthy mushrooms, and bright spinach in a creamy, protein-rich sauce.

Ingredients

  • Cooked chicken, shredded or diced (rotisserie works)
  • Cottage cheese (full-fat or low-fat)
  • White or cremini mushrooms, sliced
  • Fresh spinach, roughly chopped
  • Onion, chopped
  • Garlic, minced
  • Olive oil
  • Salt
  • Pepper
  • Dried thyme
  • Grated Parmesan or cheddar (optional)
  • Pasta, rice, or cauliflower rice for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté onion and garlic in olive oil until soft. Add mushrooms and cook until they release liquid and brown.
  3. Add spinach and cook until wilted. Remove from pan.
  4. In a bowl, mix cottage cheese, a beaten egg, herbs, salt, pepper, and half the cheese. Fold in chicken and vegetables.
  5. Transfer to a greased baking dish, top with remaining cheese, and bake for 20-25 minutes until set and golden.

Notes

Use a cast-iron or ceramic baking dish for even browning. Drain excess liquid from mushrooms to avoid a soggy bake. Let the casserole rest for 10 minutes before serving.
