A delightful dish featuring tender chicken, sweet and tart cranberries, and fragrant rosemary, perfect for cozy dinners.

Ingredients

  • Chicken thighs or breasts
  • Fresh rosemary
  • Cranberries (fresh or dried)
  • Olive oil
  • Garlic
  • Salt
  • Pepper
  • Optional: onion or shallots for added flavor

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe pan, heat olive oil over medium heat.
  3. Season the chicken with salt, pepper, and minced garlic.
  4. Once the oil is hot, place the chicken in the pan skin-side down and sear until golden brown, about 5-7 minutes.
  5. Flip the chicken over and add cranberries and rosemary to the pan.
  6. Carefully transfer the pan to the preheated oven and roast for about 25-30 minutes or until the chicken is cooked through.
  7. Serve warm and enjoy!
