Cranberry Brie and Mozzarella Grilled Sandwich

A cozy and creamy sandwich featuring melted brie and mozzarella with a touch of sweet-tart cranberry sauce, perfect for any meal.

Ingredients

  • 4 slices sturdy bread (sourdough, country loaf, or whole grain)
  • 23 tablespoons cranberry sauce or chutney
  • 34 oz brie, rind removed and sliced thinly
  • 34 oz fresh mozzarella, sliced or torn
  • 2 tablespoons butter, softened (or olive oil spread)
  • Optional: a handful of baby spinach or arugula

Instructions

  1. Preheat a skillet or griddle over medium-low heat.
  2. Butter one side of each bread slice (or brush with olive oil).
  3. On the unbuttered side, spread cranberry sauce on two slices. Layer brie and mozzarella on top. Add spinach if using. Top with remaining bread slices, buttered side out.
  4. Place sandwiches in the skillet. Cook 3–4 minutes per side, pressing gently, until bread is golden brown and cheese melts. Lower heat if bread browns too fast before cheese melts.
  5. Let sandwiches rest 1 minute, then slice and serve.

Notes

For extra texture, consider adding thin apple or pear slices, or toasted walnuts.
