A luxurious crab brulee with a creamy custard base, fresh crab meat, and a perfectly caramelized topping that impresses at any dining occasion.

  • 1 cup fresh lump crab meat
  • 1 cup heavy cream
  • 3 large egg yolks
  • 1/2 cup grated Parmesan or Gruyère cheese
  • Salt to taste
  • Black pepper to taste
  • 1/4 teaspoon cayenne or paprika
  • Fresh herbs (chives or parsley) for garnish
  • Breadcrumbs for topping (optional)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Prepare the custard base by whisking together egg yolks and heavy cream in a bowl.
  3. Add seasonings and fold in the crab meat gently.
  4. Divide the mixture evenly among lightly greased ramekins.
  5. Place the ramekins in a deep baking pan and fill with hot water halfway up the sides.
  6. Bake for 30-40 minutes until the custard is set but still slightly jiggly in the center.
  7. Let cool slightly, then top with a layer of grated cheese and breadcrumbs (if using).
  8. Carmelize the topping using a kitchen torch or under a broiler until golden brown.
  9. Serve warm, garnished with fresh herbs.
