  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • 1 cup sugar
  • ½ cup brown sugar
  • ¾ cup vegetable oil
  • 1 cup canned pumpkin puree
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In another large bowl, combine the sugars and oil. Beat in the pumpkin, eggs, and vanilla until well blended.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in nuts if using.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For extra moisture, consider adding a couple of tablespoons of yogurt or sour cream to the batter. You can also customize with adding chocolate chips or dried fruits.
