  • 2 cups rolled oats (old-fashioned)
  • 1 1/2 cups cottage cheese (small or medium curds)
  • 2 large eggs
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 cup milk (dairy or plant-based)
  • 2 medium apples, peeled and diced
  • 1/4 cup chopped nuts or raisins (optional)
  • 2 tbsp melted butter or coconut oil (optional for richer top)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease an 8×8-inch baking dish.
  2. Blend cottage cheese, eggs, milk, maple syrup, and vanilla until mostly smooth.
  3. Mix oats, baking powder, cinnamon, and salt in a large bowl. Fold the blended cottage cheese mixture into the dry ingredients. Stir in diced apples and optional nuts or raisins.
  4. Pour the batter into the prepared dish. Smooth the top and dot with melted butter or oil if using. Bake for 30–35 minutes, or until set. Let rest for 5–10 minutes before serving.

Notes

For a creamier bake, blend the cottage cheese until very smooth. If the center seems underdone, cover loosely with foil and bake for an additional 5–7 minutes. Leftovers store well and reheat nicely.
