A warm and hearty Japanese Harusame Noodle Soup made with delicate glass noodles and savory broth, ready in just 25 minutes.

Ingredients

  • 100g Harusame noodles (glass noodles)
  • 4 cups vegetable or chicken broth
  • 1 cup mushrooms, sliced
  • 1 cup spinach or bok choy
  • ½ cup carrots, julienned
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Green onion for garnish

Instructions

  1. Start by boiling the vegetable or chicken broth in a pot over medium heat.
  2. Add the sliced mushrooms and carrots to the broth. Let them simmer for about 5 minutes.
  3. While the vegetables are cooking, soak the Harusame noodles in hot water for about 5 minutes until soft. Drain and set aside.
  4. Add the spinach or bok choy to the pot and let it wilt for 1-2 minutes.
  5. Stir in the soy sauce and sesame oil for flavor.
  6. Gently add the softened Harusame noodles to the pot and stir to combine. Simmer for an additional 2 minutes.
  7. Serve hot, garnished with sliced green onions for a fresh touch.

Notes

Make sure to watch the noodles closely when soaking. Store leftovers in an airtight container in the fridge for up to 3 days.
