  • 1 cup soy sauce
  • 1 cup vinegar (white or cane)
  • 1 head garlic (crushed)
  • 2 bay leaves
  • 1 teaspoon black peppercorns (optional)
  • 1-2 tablespoons sugar (optional, for sweetness)
  • Water (as needed)
  • Cooking oil

Instructions

  1. In a large bowl, combine chicken, soy sauce, crushed garlic, bay leaves, and black peppercorns. Let it marinate for at least 30 minutes, or longer for more flavor.
  2. Heat oil in a pot over medium heat. Add the marinated chicken, reserving the marinade for later.
  3. Sear the chicken until golden brown on all sides.
  4. Pour in the marinade and add vinegar. Do not stir; let it simmer for a few minutes.
  5. Add water to cover the chicken, then bring to a boil. Reduce heat and simmer for about 30 minutes.
  6. If desired, add sugar to balance the acidity. Adjust seasoning to taste.
  7. Serve hot with steamed rice.

For a gluten-free option, use tamari instead of soy sauce. For added nutrition, you can include vegetables like potatoes or carrots.
