Cinnamon Swirl Apple Fritter Bread

A fluffy and moist bread filled with layers of cinnamon, sugar, and chopped apples, topped with a sweet glaze.

  • 2 apples, peeled and chopped (Granny Smith or Honeycrisp work well)
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon
  • 1/3 cup light brown sugar
  • 1 tsp ground cinnamon
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 tsp baking powder
  • 1/2 cup milk
  • 1/2 cup powdered sugar (optional glaze)
  • 12 tbsp milk (optional glaze)
  • Dash of vanilla extract (optional glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a small bowl, toss chopped apples with 2 tbsp sugar and 1 tsp cinnamon. Set aside.
  3. In another bowl, mix brown sugar and cinnamon. Set aside.
  4. Cream butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each. Stir in vanilla.
  5. In a separate bowl, whisk together flour and baking powder. Add dry ingredients to the creamed mixture alternately with milk, beginning and ending with flour.
  6. Pour half of the batter into the prepared pan. Top with half of the apple mixture and half of the cinnamon-sugar swirl. Lightly press down. Add remaining batter, then the rest of the apples and cinnamon swirl on top. Swirl lightly with a knife.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack.
  8. For the optional glaze, mix powdered sugar, milk, and vanilla until smooth and drizzle over cooled bread. Enjoy warm with coffee or tea, or eat it cold it’s great either way!

Notes

Make sure your butter is softened to room temperature for the best texture. Feel free to adjust the type of apples based on your preference for sweetness or tartness. Don’t skip the optional glaze; it adds a lovely finish!
