These delightful muffins combine rich chocolate flavor with comforting pumpkin, perfect for breakfast or a sweet snack.

  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix the pumpkin puree, sugar, and oil until smooth.
  3. Beat in the eggs one at a time, making sure everything is well combined.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture until just mixed. Don’t overmix!
  6. Fold in the chocolate chips if using.
  7. Pour the batter into the muffin tin, filling each liner about two-thirds full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean. Let them cool for a few minutes before serving.

Notes

For the best texture, avoid overmixing the batter. Store muffins in an airtight container at room temperature for up to 3 days.
