Delicious and healthy protein balls made with pumpkin and chocolate chips, perfect for a quick snack any time of the day.

Ingredients

  • 1 cup pumpkin puree
  • 1 1/2 cups rolled oats
  • 1/2 cup protein powder
  • 1/4 cup chocolate chips
  • 1/4 cup nut butter (almond or peanut)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon cinnamon
  • A pinch of salt

Instructions

  1. In a large mixing bowl, combine the pumpkin puree, nut butter, and honey (or maple syrup).
  2. Stir in the oats, protein powder, cinnamon, and salt until well mixed.
  3. Fold in the chocolate chips.
  4. Refrigerate the mixture for about 30 minutes to make rolling easier.
  5. Once chilled, scoop out tablespoon-sized portions and roll them into balls.
  6. Store the balls in an airtight container.

Notes

For easier handling, chill the mixture before rolling. You can use a cookie scoop for uniform balls. Store in the refrigerator for up to a week or freeze for longer storage.
