Chimichurri Shrimp brings a bright burst of flavor, combining succulent shrimp with a vibrant chimichurri sauce that’s perfect for any meal.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons red wine vinegar
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix chopped parsley, minced garlic, olive oil, red wine vinegar, red pepper flakes, salt, and pepper to prepare the chimichurri sauce. Set aside.
  2. In a separate bowl, toss the shrimp with about half of the chimichurri sauce and let it marinate for 10-15 minutes.
  3. Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they are pink and opaque.
  4. Drizzle the remaining chimichurri over the cooked shrimp and enjoy!

Notes

Do not overcook the shrimp to avoid toughness. Store leftovers in an airtight container in the refrigerator for up to 2 days.
