  • 8 oz pasta (e.g., fettuccine or penne)
  • 1 lb chicken breast, sliced
  • 1 bell pepper, sliced (any color)
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 cup cream (or half-and-half)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Cook the pasta according to package directions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add sliced bell pepper, onion, and garlic to the skillet. Cook until the vegetables are tender, about 3-5 minutes.
  4. Stir in chili powder, cumin, salt, and pepper. Mix well.
  5. Lower the heat and pour in the cream. Stir to combine and simmer for a couple of minutes.
  6. Add the cooked pasta to the skillet and mix until the pasta is well coated in the sauce.

Notes

For added spice, consider tossing in some sliced jalapeños or additional taco seasoning. Ensure you store leftovers in an airtight container for up to 3 days.
