Chicken Broccoli Rice Casserole

A comforting dish that combines tender chicken, fresh broccoli, and creamy rice, perfect for family dinners or potlucks.

Ingredients

  • 1.5 cups of water
  • 1.5 cups of uncooked instant rice
  • 2 large chicken breasts (cooked and cubed into 1-inch pieces)
  • 1 head of broccoli (segmented into florets)
  • 2 cans (10.5 ounces each) of condensed cream of broccoli soup
  • 1 cup of milk
  • 1 tablespoon of Italian-seasoned bread crumbs
  • 1 teaspoon of garlic powder
  • 1/8 teaspoon of ground black pepper
  • 1 package (8 ounces) of shredded Cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium saucepan, bring 1.5 cups of water to a boil. Add 1.5 cups of uncooked instant rice, stir, cover, remove from heat, and let sit for 5 minutes before fluffing.
  3. Transfer fluffed rice to a casserole dish and mix in cubed chicken and broccoli florets.
  4. In a bowl, combine the cream of broccoli soup with milk, Italian-seasoned bread crumbs, garlic powder, and black pepper. Pour over the rice, chicken, and broccoli, and mix together. Stir in half of the shredded Cheddar cheese.
  5. Sprinkle the remaining Cheddar cheese on top and bake uncovered for about 30 minutes, until bubbling and golden.
  6. Let it rest for 5 minutes before serving.

Notes

Use leftover chicken to save time; you can steam the broccoli beforehand for better texture. This casserole can be made ahead of time and baked just before serving.
