A cozy, one-skillet meal featuring ground beef, potatoes, sautéed onions, and melty cheese, perfect for a weeknight dinner.

  • 1 lb (450 g) ground beef (80/20)
  • 1 lb (450 g) potatoes, diced small (Yukon Gold or russet)
  • 1 medium yellow onion, diced
  • 1 bell pepper, diced (optional)
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme or oregano
  • Salt and pepper to taste
  • 2 tbsp vegetable oil or butter
  • 1 cup shredded cheddar cheese (or a mix of cheddar and Monterey Jack)
  • 2 tbsp chopped parsley for garnish

Instructions

  1. Heat the skillet over medium-high heat. Add 1 tbsp of oil. Brown the ground beef until no pink remains. Season with salt, pepper, and half the smoked paprika. Remove beef and set aside.
  2. Lower heat to medium. Add remaining oil and the diced potatoes. Cook, stirring occasionally, until edges turn golden and potatoes are nearly tender (about 12–15 minutes).
  3. Add the diced onion and bell pepper. Sauté until soft, about 5 minutes. Stir in garlic, the rest of the paprika, and thyme.
  4. Return the beef to the pan. Mix well and press the mixture into an even layer. Sprinkle shredded cheese across the top. Cover the skillet for 2–3 minutes to melt the cheese.
  5. Garnish with parsley and serve. Top with a fried egg if desired.

Notes

For a lower-fat option, use lean ground turkey. For a dairy-free meal, use dairy-free cheese. Leftovers can be refrigerated for up to 4 days or frozen for 3 months.
