A cozy, cheesy cassoulet featuring tender chicken, lean turkey sausage, and creamy white beans baked under a golden breadcrumb top.

  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 12 ounces turkey sausage (Italian-style or smoked), sliced
  • 2 tablespoons olive oil, divided
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 ounces each) cannellini or Great Northern beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup low-sodium chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme (or 4 fresh sprigs)
  • 1 bay leaf
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded Gruyère or mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 3/4 cup breadcrumbs (panko or regular)
  • 1 tablespoon melted butter (or olive oil)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Heat oven to 400°F (200°C).
  2. Warm 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Brown the turkey sausage for 3–4 minutes, transfer to a plate.
  3. Add the remaining 1 tablespoon oil. Sear the chicken with a pinch of salt and pepper until lightly browned, 4–5 minutes. Transfer to the plate with the sausage.
  4. In the same pot, add onion and cook until soft, 3–4 minutes. Stir in garlic for 30 seconds.
  5. Add tomato paste and smoked paprika. Cook 1 minute, stirring.
  6. Stir in beans, diced tomatoes, and chicken broth. Add thyme, bay leaf, 1/2 teaspoon salt, and pepper. Return sausage and chicken to the pot and bring to a gentle simmer.
  7. Simmer 8–10 minutes to blend flavors. Remove the bay leaf.
  8. In a small bowl, mix breadcrumbs with Parmesan and melted butter (or oil).
  9. Sprinkle Gruyère (or mozzarella) over the cassoulet, then top with the breadcrumb mixture.
  10. Bake 12–15 minutes, until the top is golden and the edges bubble. Broil for 1–2 minutes for extra color.
  11. Rest 5 minutes. Garnish with parsley and serve warm.

Notes

This dish can be made ahead of time. Assemble without cheese and breadcrumbs, refrigerate, and add them just before baking.
