Burrata bruschetta combines creamy cheese and fresh tomatoes on toasted bread for a flavorful starter or light meal.

Ingredients

  • 1 small loaf country bread or baguette, sliced 1/2-inch thick
  • 2 large ripe tomatoes, seeded and diced (or 1 pint cherry tomatoes, halved)
  • 1 ball burrata (about 68 oz)
  • 2 cloves garlic, minced
  • 2 tbsp extra-virgin olive oil, plus extra for drizzling
  • 1 tbsp balsamic glaze or a light drizzle of balsamic vinegar
  • Fresh basil leaves, torn
  • Salt and freshly ground black pepper
  • Optional: flaky sea salt, lemon zest

Instructions

  1. Prepare tomatoes: In a bowl, combine diced tomatoes, minced garlic, olive oil, a pinch of salt, and black pepper. Stir in torn basil and set aside to marinate briefly.
  2. Toast bread: Heat oven to 400°F (200°C). Arrange bread slices on a baking tray. Lightly brush each with olive oil. Toast for 6–8 minutes until golden and crisp at the edges.
  3. Assemble: Tear open the burrata and place a generous spoonful on each toasted slice. Spoon the tomato mixture over or beside the burrata.
  4. Finish: Drizzle with balsamic glaze or vinegar and top with flaky sea salt and extra basil. Serve immediately.

Notes

For a nutty twist, sprinkle toasted pistachios on top. Serve immediately for best texture.
