Transform simple chicken breasts into a creamy, garlicky weeknight favorite with this Boursin Chicken recipe, featuring a rich garlic-and-herb cheese sauce.

  • 4 boneless, skinless chicken breasts (about 1 to 1.25 lbs)
  • Salt and black pepper
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small shallot or 1/4 cup finely chopped onion
  • 1 cup low-sodium chicken broth
  • 4 oz garlic-and-herb cheese (Boursin or similar)
  • 2 tbsp chopped fresh parsley
  • 1 tsp lemon zest (optional)
  • 1 tbsp butter (optional, for gloss)

Instructions

  1. Pat chicken dry. Season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and brown 3–4 minutes per side until golden. Transfer to a plate.
  3. Reduce heat to medium. Add a touch more oil if the pan is dry, then sauté shallot and garlic until soft and fragrant, about 1 minute.
  4. Pour in chicken broth and scrape up browned bits from the pan. Let simmer 1–2 minutes.
  5. Stir in the garlic-and-herb cheese until melted and smooth. If the sauce is too thick, add a splash more broth.
  6. Return chicken to the pan. Spoon sauce over the pieces and simmer gently 5–7 minutes, or until chicken reaches 165°F (74°C).
  7. Finish with chopped parsley and lemon zest. Add butter for shine if you like. Serve hot.

Notes

For added freshness, stir in baby spinach before serving. Great paired with rice, pasta, or roasted vegetables.
