A fresh and vibrant Greek Pasta Salad with feta cheese, perfect for meal prep or summer gatherings.

Ingredients

  • 12 oz rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper (red or yellow), diced
  • ½ red onion, finely chopped
  • ¾ cup black olives, sliced
  • 1 cup feta cheese, crumbled
  • ½ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool the pasta.
  2. In a large bowl, combine the halved cherry tomatoes, diced cucumber, bell pepper, red onion, and olives.
  3. Add the cooled pasta to the vegetable mixture.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour the dressing over the pasta and vegetables, mixing well to ensure everything is coated.
  6. Gently fold in the crumbled feta cheese.
  7. Serve immediately or chill in the refrigerator for 30 minutes before serving to enhance the flavors.

Notes

Make sure to rinse the pasta under cold water after draining to keep it from sticking together.
