  • 2 large boneless, skinless chicken breasts (about 1.5 lb total)
  • 1 tablespoon olive oil (or melted butter)
  • 1 teaspoon kosher salt (use 3/4 teaspoon if using fine salt)
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (sweet or smoked)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon Italian seasoning (optional)
  • 1 teaspoon brown sugar or honey (optional, for browning)
  • Lemon wedges and chopped parsley, for serving (optional)

Instructions

  1. Heat oven to 425°F (220°C). Line a sheet pan with parchment for easy clean-up.
  2. Pound chicken to even thickness (about 3/4–1 inch) using a meat mallet or rolling pin between two sheets of plastic or parchment.
  3. Pat chicken dry with paper towels.
  4. Mix salt, pepper, garlic powder, paprika, onion powder, and Italian seasoning in a small bowl. Stir in brown sugar if using.
  5. Rub chicken with olive oil, then coat all sides with the spice mix. Place on the pan with a little space between pieces.
  6. Bake at 425°F for 18–22 minutes, or until the center hits 160–165°F on an instant-read thermometer.
  7. Rest 5–10 minutes, then slice against the grain, squeeze fresh lemon over the top, and sprinkle with parsley. Serve warm or cool for meal prep.
