Delightful doughnuts filled with creamy banana pudding cheesecake, drizzled with a sweet glaze and topped with crumbled Nilla wafers.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup whole milk
  • 1 large egg
  • 2 tbsp melted unsalted butter
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 ripe banana, mashed
  • 1/4 cup instant banana pudding mix
  • 1/2 cup heavy cream, whipped
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp milk (for glaze)
  • 1/2 tsp vanilla extract (for glaze)
  • Crumbled Nilla wafers (for topping)
  • Banana slices (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a doughnut pan.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In a separate bowl, whisk together milk, egg, melted butter, and vanilla extract.
  4. Add wet ingredients to dry ingredients and stir until just combined.
  5. Fill each cavity of the prepared doughnut pan about halfway with batter.
  6. Bake for 10-12 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
  8. In a mixing bowl, beat cream cheese and powdered sugar until smooth and creamy.
  9. Add mashed banana, vanilla extract, and banana pudding mix; mix until well combined.
  10. Gently fold in whipped heavy cream until light and fluffy.
  11. Transfer filling to a piping bag or resealable plastic bag with a corner snipped off.
  12. In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
  13. Once doughnuts are completely cool, carefully slice each horizontally in half.
  14. Pipe banana pudding cheesecake filling onto the bottom half of each doughnut.
  15. Top with the other half of the doughnut.
  16. Drizzle glaze over the top of each doughnut.
  17. Sprinkle with crumbled Nilla wafers and add banana slices, if desired.
  18. Serve and enjoy!

Notes

Make sure to gently fold in the whipped cream to maintain its fluffy texture. Allow the doughnuts to cool completely before adding the filling to prevent it from melting.
