Banana Bread Mix

  • 1 package banana bread mix (15.25 oz)
  • 3 medium bananas (about 1½ cups mashed)
  • 2 large eggs (room temperature)
  • 1/3 cup vegetable oil
  • 1/4 cup water
  • 2 tbsp Greek yogurt
  • 1 tsp pure vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Bring eggs to room temperature.
  3. In a large bowl, mash bananas until mostly smooth.
  4. Mix in eggs, oil, water, yogurt, and vanilla extract until well combined.
  5. Add banana bread mix and cinnamon. Fold gently 12-15 times until just combined.
  6. If using, fold in walnuts.
  7. Pour batter into prepared pan.
  8. Bake 55-60 minutes or until a toothpick comes out with a few moist crumbs.
  9. Cool in pan for 10 minutes, then remove to wire rack.
  10. Cool completely before slicing.

Notes

Storage: Keep wrapped at room temperature for up to 3 days, refrigerated for 1 week, or frozen for up to 3 months.
