Baked Pears with Brie, Walnuts, and Cranberries

A cozy and elegant dish combining sweet pears, warm brie, crunchy walnuts, and tart cranberries, perfect for a sophisticated appetizer or light dessert.

  • 34 ripe but firm pears (Bosc or Anjou)
  • 68 oz brie, cut into small cubes or slices
  • 1/2 cup walnuts, chopped
  • 1/3 cup dried cranberries
  • 12 tbsp honey or maple syrup, plus more to finish
  • 1 tbsp unsalted butter, melted (optional)
  • 1/2 tsp ground cinnamon (optional)
  • Pinch of sea salt and black pepper
  • 1 tsp lemon juice (optional)
  • Fresh thyme leaves (optional, for garnish)

Instructions

  1. Heat the oven to 375°F (190°C) and line a baking sheet with parchment.
  2. Halve the pears lengthwise and scoop out the core to make a small well.
  3. Brush the cut sides with lemon juice (optional). Place the pears cut side up on the prepared pan.
  4. Mix walnuts, cranberries, cinnamon, salt, and melted butter in a bowl. Stir in 1 tbsp honey or maple syrup.
  5. Tuck brie pieces into each pear well and spoon the nut-cranberry mix on top.
  6. Bake for 15–20 minutes until pears are tender and brie is melted.
  7. Drizzle with more honey or maple, add thyme if desired, and serve warm.

Notes

Use firm pears to avoid mushiness and toast walnuts for extra flavor. Can prepare ahead of time and bake just before serving.
